Low Carb Pancakes

    1. Put all ingredients in a blender. Blend until smooth.
    2. Let rest for 2 minutes so the bubbles can settle.
    3. Pour 1/4 of the batter into a hot pan greased with butter or pam spray.
    4. Cook for 2 minutes until golden, flip and cook 1 minute on the other side.
    5. Repeat with the rest of the batter.
  1. Serve with sugar free syrup (or any syrup of your choice) and fresh berries. (I generally just use butter on top)

Cheeseburger Stew

Cheeseburger Stew
This is one of our favorites and easy to make.
(You can use a crock pot or insta pot)

Add 2 to 3lbs of ground beef
1 onion finely chopped
4 cloves of minced garlic
1 beef stock cube
2 chopped or diced tomatoes,
salt and pepper
1 cup of water.
Stir it all together and set on high for 4 hours or meat/stew and high pressure and temp setting on the insta pot. (I used 35 min) Safely Release pressure or after crock pot has completed the 4 hour requirement, remove the lid and add a layer of pickles and about 2 cups of your favorite grated cheese. Recover and wait until the cheese is melted. Service with lettuce and either mayo or mustard on the side.

Bacon Broccoli Salad

So you all know by now that I like to experiment with my measurements. This one changes every time I make it! It is always good though!

3 to 5 Heads of broccoli, cutting and washing off the florets? (Those top pieces)

1/2 to 1 pound of bacon saving half of the grease for adding over the broccoli

Cheese cubes are optional. 1/4 to 1 cup depending on your taste.

Almond slivers or pine nuts 1/8 to 1/4 cup

1/2 cup keto or low sugar and carb Mayo

1/2 cup of ranch. The last 2 times I have made my own with Heavy Cream and Mayo… I know, it sounds weird but it was really good!

Easy Cheesy Pizza (Cheese Crust)

This one is quick and easy!

5 minutes of prep and less than 30 minutes start to finish!

2 cups mozzarella

1 egg

1 tablespoon Italian seasoning

1 teaspoon onion powder

1 teaspoon garlic salt

Preheat oven to 425

Mix chees, egg, and seasonings together by hand.

Pat the spread of cheese on parchment paper to form the crust

Bake for 12 min or until browned

Pull and top with pizza sauce (1/4 cup of your favorite)

Cheese and toppings of your choice.

Bake until cheese is melted through (about 5 to 8 minutes)

The “Meatza”

OH MY!!!! This thing is da bomb! Meat crust Pizza!

Crust Ingredients:

1/2 to 1 cup of Shredded mozzarella cheese

1 Egg

1 pound of ground beef. (Leaner the better for store bought, more fattier for grass fed)

1 tablespoon Italian Seasoning

1 teaspoon Garlic Salt

1 Teaspoon Onion powder

Preheat Oven to 425 degrees Fahrenheit. Line cookie sheet or baking sheet with parchment paper. Mix all ingredients together. Pat thin onto parchment paper into shape of your choose. Bake for 17 to 20 min until brown.

Toppings:

Top with 1/4 to 1/2 cup of your favorite low carb pizza sauce

Mozzarella Cheese

Pepperoni

Any toppings that you choose!

Put it back into the over for 5 to 10 minutes, until cheese is melted to your preference.

Peanut Butter Cookie dough FAT BOMB

img_2349These are absolutely AMAZING! Especially if you add some Lilly’s Chocolate chips before scooping them into balls!

Ingredients:

16 oz of softened cream cheese (full fat)

2 sticks of softened salted butter. 1/2 cup

1/2 cup of all natural peanut butter (no sugar added, just peanuts and salt)

1/3 cup of Stevia erythitol blend. (Swerve will work too!)

1 Tablespoon Vanilla extract

Optional: 4 to 8 oz. of Lilly’s Chocolate Chips.

Mix all ingredients together.

Line Cookie sheet with parchment paper. Scoop golf ball size rounds of mixture onto the parchment paper. Refrigerate for 30 minutes or longer. Balls will become harder over time. (Can put into storage containers, but keep refrigerated)
